Business laptops with Intel 8th to 10th gen CPUs are the sweet spot. They are widely available used, well documented and easy to service. Examples include:

Which macOS version should a laptop run?

Laptops use MacBookPro SMBIOS models. Tahoe only supports the MacBookPro16,x family among Intel laptops, which covers most suitable 8th to 10th gen machines.
